Roasted Chickpeas in Lettuce Boats

Roasted Chickpeas:

10 Serves

  • 840g cooked chickpeas (or approx. 2 tins)
  • 2 Tbs paprika
  • 2 tsp onion powder
  • 1 Tbs nutritional yeast (optional)
  • Squeeze of 1 lemon
  • 4 tsp apple cider vinegar (or other light coloured vinegar)
  • 2 tsp maple syrup
  • 2 Tbs tamari
  • 10 lettuce leaves kept whole (like san choy bau!)


  1. Preheat oven to 180’C, line a baking tray with parchment or a reusable baking sheet
  2. Mix all ingredients together into a bowl and combine thoroughly. Allow to marinade for 20-25 minutes until the oven is ready.
  3. Pour everything onto a tray, bake for 25-30 minutes until chickpeas are crunchy and the liquid is evaporated. Leave to cool
  4. Scoop the chickpeas into the lettuce cups and serve as a snack. Or omit the lettuce and add to salads
