It’s not quite a mayo, it’s not quite sweet, or savoury. It’s super delicious and I’ve eaten it on everything – sandwiches, burgers, with chips, with breakfast, on salad.
No questions needed – just make it. It’s not zero waste but if you get all your ingredients from glass jars, or go so far as to MAKE your own chutney and mayo – then the containers can be repurposed for storing ingredients (especially if you’re at the start of your journey to zero waste and you need to start getting supplies!)
What you need and what to do:
- 1/4 avo, 1/4 C chutney, 2-3 dollops vegan Mayo (make your own using aquafaba and this recipe from Peanut Butter Vegan), 2tsp garlic, 1tsp chilli, 1T capers.
- BLEND with 1/3C water or until it’s the consistency you like!
