Ummm hello delicious Caramel Choc brownies

Waste free AND DELICIOUS you say? No problem.  I made these a while ago and forgot how good they are.  What’s even better is I’ve worked out that they also require no packaged ingredients so double win!

For the brownie:

1.5C nuts (I used macadamias)
5 medjool dates
4Tbsp agave or liquid sweetener
1C cacao powder
3Tbsp coconut flour
1/3C melted coconut oil

Blitz the dates and nuts in a processor until they start forming together. Add rest of the ingredients and pulse until it forms a soft dough. Add extra sweetener if you want a sweeter brownie. Spread half the mixture into a brownie tin and place in the fridge.

For the caramel:
2/3C melted coconut oil
1/3C maple syrup
8 medjool dates
1/4C desiccated coconut
1tsp vanilla powder
Water for consistency

Blend all ingredients except water. Add water if it gets very thick (approx 1/4C)

Pour over brownie tin mix then freeze approx 30 minutes to set. Top with remaining brownie mixture and set in fridge for 90 minutes
